Desserts: Cathy C's Lemon Cake
Ingredients
1 pkg of lemon cake mix, pudding in the mix.
1 4-serving pkg of lemon pudding
3/4 cup of oil
4 eggs
3/4 cup of water
Icing:
(you can vary these to taste)
2 cup powdered sugar
1/2 cup lemon juice
2 tbsp melted butter
2 tbsp water
Beat together until smooth.
Instructions
Mix together w/electric mixer. (follow directions for cake mix for oven temp)
Bake for 25-30 minutes, until golden brown and toothpick comes clean.
Let stand for 5 minutes. Poke forkholes all over cake and then pour icing
over cake, allow to continue cooling.
